CHICKEN KIEV 
4 to 6 chicken breasts
1 pkg. boiled ham
1 pkg. Swiss cheese
2 eggs
1 tbsp. milk
Butter
Parsley

Pound the boned chicken breasts until very thin. Salt and pepper the chicken. Put a small chunk of butter, a strip of ham and a strip of Swiss cheese, a sprinkle of parsley on each piece of chicken. Roll (fold in sides and roll like a jelly roll). Dust with flour, dip in beaten eggs and roll in cracker crumbs. Set in the refrigerator for at least one hour before cooking. Fry until brown. Bake in medium oven (325 - 350 degrees) one hour. Serve with Hollandaise sauce.
