APPLE SNACK CAKE 
3/4 c. vegetable oil
2 eggs
2 c. sugar
2 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
3 c. apples, peeled & chopped
1 (6 oz.) pkg. butterscotch morsels
1 c. pecans, chopped

Combine oil, eggs and sugar until well mixed. Combine dry ingredients and add alternately with apples to creamed mixture, mixing well. Stir in 1 cup chopped pecans and 1/2 package of butterscotch morsels. Spread in a greased 13 x 9 x 2 inch pan. Sprinkle batter with remaining morsels. Bake at 350 degrees for 1 hour.
