APPLE SNACK CAKE 
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
4 lg. eggs
1 c. oil
1 3/4 c. sugar
1 tsp. vanilla
2 1/2 c. pared & chopped apples
1 c. coarsely chopped walnuts

Sift first 4 ingredients together. Beat eggs, oil, sugar and vanilla. Slowly add dry ingredients and beat thoroughly. Stir in 2 1/2 cups pared and chopped apples and walnuts. Pour into greased jelly roll pan (12 x 18 inch). Bake 40 minutes at 350 degrees. Optional - glaze.
