PORCUPINE MEAT BALLS 
1 lb. ground beef
1/2 c. uncooked rice
1 tsp. salt
1/2 tsp. pepper
1 sm. onion, sliced
1/2 green pepper, sliced
1 tbsp. shortening
2 1/2 c. tomato juice
Dash of nutmeg
Salt and pepper to taste

Combine ground beef, rice, salt and pepper. Form into small balls, about 1 1/2 inches in diameter. Place in baking dish. In a skillet, brown onions and green pepper in shortening. Add tomato juice, nutmeg, salt and pepper to taste. Pour over meatballs. Cover baking dish. Bake in a 350 degree oven about 1 hour or until visible rice is very tender.
