POTATO BAKE 
2 lb. potatoes
2 tbsp. butter
2 tbsp. grated Parmesan
1/2 c. grated Edam cheese
2 eggs
2/3 c. milk
Salt & pepper

Preheat oven to 375 degrees. Peel potatoes, cut into even size pieces and boil until tender. Drain and mash them. Add the butter, the Parmesan and half the Edam; mix well.

Beat the eggs and milk together and gradually add this to potatoes, stirring well. Season with salt and pepper. Spoon into shallow baking dish; sprinkle the remaining cheese on top. Bake for 30-40 minutes until slightly puffed and golden brown.
