WHITE CHOCOLATE MACADAMIA NUT
COOKIES
 
1/2 c. butter
1/2 c. sugar
1/2 c. brown sugar
1 lg. egg
1 tsp. vanilla
1 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. macadamia nuts
1 c. white chocolate chips

Mix butter with sugars until lumps are gone. Add ingredients in following order: egg, vanilla, flour, baking soda and salt. Mix until creamy. Stir in macadamia nuts and white chocolate chips. For 18 large cookies. Use a 1 ounce ice cream scooper to drop cookies. Bake at 375 degrees for 10 to 15 minutes.

I've enjoyed macadamia nut cookies before but had never made them. After some hunting online I found this recipe. It seemed simple so I made a batch for company to enjoy after dinner. What a hit they were!! I followed the recipe without any changes and they were delicious and addictive! I did use parchment paper on the cookie sheets, always a good idea when baking cookies because of easy clean-up, less chance of burning the bottoms and easy removal from cookie sheet. I'll be making another batch tomorrow... the batch I made yesterday are all but gone! I'll also add this recipe to my "gift giving" recipe collection when I make gift baskets. Way too good to not share!
