PITA BREAD 
1 pkg. dry yeast
1/2 tsp. sugar
1 1/4 c. lukewarm water
4 c. white flour
1 tsp. salt

Grease 2 baking sheets, set aside. Stir yeast and sugar into warm water, let set 10 minutes. Stir salt into flour, add yeast mixture, stir to form dough. Knead until smooth and elastic, place dough in oiled bowl, turn to coat top. Let rise in a warm place until double, about 1 hour.

Punch down dough and knead. Divide into 8 equal pieces. Roll each into an oval about 10x5 inch. Put on baking sheets, cover with plastic and let rise 5-8 minutes. Bake in a 475 degree oven 6-8 minutes until light brown. Place in bowl lined with a towel to cool and cover with towel to make them soft. Cut in half to serve.
