BROCCOLI SOUFFLE 
3 (10 oz.) pkg. frozen, chopped broccoli
2 eggs, beaten
1 c. mayonnaise
10 3/4 oz. can cream of mushroom soup
2 tbsp. chopped onion
1 c. shredded Cheddar cheese
4 oz. packaged herb stuffing
1/2 c. butter, melted

Preheat oven to 350 degrees and grease 2 quart baking dish. Thaw and drain the broccoli. Mix first 6 ingredients together and put into baking dish. Top with stuffing mix and pour melted butter over all. Bake 45 minutes.
