MY MOM'S CORNFLAKE COOKIES 
2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
1 1/4 c. shortening
1 c. sugar, white
1 c. brown sugar, firmly packed
2 eggs, well beaten
1 tsp. vanilla
2 c. flaked or shredded coconut
2 c. cornflakes

Sift together all dry ingredients. Cream shortening; add sugars gradually, beating until light. Add eggs and vanilla. Combine the sifted dry ingredients and creamed mixture. Add coconut and cornflakes. Drop by small teaspoonfuls onto cookie sheet, 1 1/2 inches apart. Bake at 350 degrees for 8 to 10 minutes; or until delicately browned. Makes approximately 8 dozen.
