ORIENTAL MEATBALLS | |
1 1/2 lbs. ground beef or pork 1 (#2 1/2) can chunk pineapple, drained, save juice 1 c. diced celery 1 cucumber, sliced 1 tomato, cut in wedges 1 green pepper, cut in wedges 1 onion, sliced 1/2 c. vinegar 1 c. sugar 1/2 tsp. salt 2 tsp. soy sauce 1/4 tsp. pepper 1/2 tsp. ginger 2 tbsp. cornstarch 1 tbsp. water Season meat to taste and form balls. Lightly brown pineapple and vegetables in 2 tablespoons oil. Remove vegetables and pineapple and brown and partially cook meat balls. Combine vinegar, sugar, 1/2 cup pineapple juice, soy sauce and seasonings. Add to meatballs and then add the pineapple and vegetables. Continue cooking until meat is done, 30-45 minutes. Dissolve cornstarch in water and add to mixture cooking until sauce is thick and clear (may require more thickening than called for). Serve with or over steamed rice. |
