AWESOME EASY SLIDERS 
1 1/2 lb. ground beef round
1 tbsp. butter
1 large onion, chopped fine
salt and pepper, to taste
3 slices American cheese (cut into quarters)
6 (6-inch) hoagie rolls, sliced lengthwise and then cut in half (potato rolls work best)

In a LARGE cast iron skillet, heat 1 tablespoon butter until sizzling. Add onion chopped very small a la McD's or White Castle.

Divide beef into 12 equal small patties, hand form and season with salt and pepper.

Add beef to limp cooked onion and fry in open skillet for 4 to 5 minutes (do not cover or turn).

Empty and drain entire pan into a suitable strainer, meat and onion, all of it.

Clean and reheat skillet and add beef patties, uncooked side down. Place quarter cheese slice on each.

Spoon all of the cooked onion on all of the patties and cover each with the top halves of the cut hoagie rolls.

Place the bottom halves of the hoagie rolls on top of the meat/onion/rolls in the skillet. Cover skillet with a large pan or foil and steam for 2 to 3 minutes until meat is cooked through.

Place bottom roll halves on a pan or platter, cover with meat/onion/top roll and serve with ketchup, mustard and/or thin sliced dill pickles if desired.

Makes 12 sliders.

I make these sliders for the superbowl and my husband loved it! The meat was tender, flavorful, and not overly spicy. The cheese melted perfectly and the rolls were soft and buttery. I'm already planning to make it again soon.
