PUMPKIN PIE 
1 (30 oz.) Libby's pumpkin pie mix
2 eggs
2/3 c. evaporated milk
1 Reg. large pie shell pastry

Preheat oven to 425 degrees. In large bowl, slightly beat 2 eggs. Stir in 1 can 30 ounce pumpkin pie mix. Add 2/3 cup evaporated milk, mixing thoroughly. Pour into 9 inch unbaked pastry shell. Bake at 425 degrees for 15 minutes. Reduce oven temperature to 350 degrees and bake an additional 50 minutes or until knife inserted 2 inches from center comes out clean.

If regular 9 inch frozen pie shells are used recipe fills 2. Slightly thaw pie shells while combining other ingredients. Preheat oven and cookie sheet to 375 degrees. Bake on cookie sheet 1 1/4 hours or until pie test is done.
