DOUGHNUTS 
1ST PART:

3 cakes yeast or 3 tbsp. dry yeast
1/4 c. warm water
1 tsp. sugar

Dissolve yeast in warm water with sugar.

2ND PART:

1 qt. scalded milk
2 c. mashed potatoes without salt or milk
1 c. sugar
1 c. lard

Mix together and cool, then add first part with 2 eggs, 2 teaspoons salt and 6 cups flour. Put in large greased bowl and let rise until double in bulk; punch down. Add 5 1/2 cups more flour. Mix well and let rise again until double in bulk. Roll out, cut with doughnut cutter and deep fry. Makes 80 doughnuts.
