SALMON VEGETABLE SALAD | |
Lettuce leaves 1 can (7 1/2 oz.) salmon, drained 1 can sweet peas 1-2 green onions, finely chopped 1 tbsp. chopped parsley 1/4 c. chopped green pepper 1/4 c. chopped peeled cucumber 1/4 tsp. paprika 1 tbsp. lemon juice 2 tbsp. plain low-fat yogurt 2 tbsp. light mayonnaise Pepper to taste Break salmon into bite-size chunks, removing skin and bones. Mix gently with remaining ingredients. Place on lettuce leaves on individual plates. Spoon your favorite cucumber or buttermilk dressing over salads and serve. |
