BAKED APPLE WEDGES 
1 tbsp. butter
1 c. flour
2 tsp. baking powder
1/4 tsp. salt
2 eggs
1/4 tsp. orange extract
1 c. sugar
2 apples, peeled and finely chopped (2 c.)
1/2 c. chopped pecans, toasted
2 tbsp. raisins
Frozen whipped dessert topping

Grease a 9 inch pie plate with the butter; set aside. In a small bowl combine flour, baking powder, and salt. In a large bowl beat eggs and orange extract with a wire whip until foamy. Stir in sugar. Add flour mixture, stirring until well combined. The mixture will be stiff. Stir in apples, pecans, and raisins. Spread evenly in greased pie plate. Bake at 325 degrees for about 50 minutes or until golden brown and center appears set. Cut into wedges and top with dessert topping. Serve warm.
