APPLESAUCE OATBRAN MUFFINS 
2 1/2 c. oatbran
1/2 c. packed brown sugar
1/4 c. whole wheat flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
2 egg whites
1 1/2 c. unsweetened applesauce
2 tbsp. salad oil
1 tsp. vanilla
Walnuts or pecans

In large bowl mix together all dry ingredients. Set aside.

In smaller bowl combine remaining ingredients until well blended. Add all at once to dry ingredients. Add nuts as desired. Stir just until moistened. Fill muffin cups 2/3 full. Bake at 400 degrees for 17 minutes. Makes 1 dozen muffins. Each contains 2 grams of dietary fiber.
