CORNED BEEF 
4 lb. beef roast (Good lean chuck can be used)
1 tbsp. pickling spice
1 tsp. salt peter
3 cloves of garlic
1/2 c. table salt (or less)
Paprika

Use an inexpensive roast as the long corning process will make it very tender. Place roast in glass container add enough water to cover, then add rest of ingredients, use plenty paprika. (Depend on how red you want the meat). Let marinate in refrigerator for 10 days then place in roaster. Add fresh water let simmer for 2 hours. Very good.
