CHICKEN PICCATA 
1 tbsp. flour, enriched
1/4 tsp. salt
1/8 tsp. pepper
4 sm. whole chicken breasts, boned, skinned and cut in half (1 1/2 lbs.)
4 tbsp. Promise spread, divided
1/4 c. dry white wine
3 tbsp. lemon juice
1 tbsp. chopped parsley
Lemon slices

Combine flour, salt and pepper. Coat chicken with flour mixture. In large skillet, melt 2 tablespoons Promise. Brown chicken, allowing about 4 minutes per side, or until chicken is cooked through. Remove to warm platter.

Melt remaining 2 tablespoons Promise in skillet, stir in wine and lemon juice, scraping up bits from bottom of pan. Stir in parsley. Spoon sauce over chicken. Serve with lemon slices. Yields: 4 servings.
