CHEROKEE PIE 
1 tbsp. olive oil
1 lb. ground beef
3/4 c. onion, chopped
1/8 tsp. thyme
1 bay leaf
1 can cream of mushroom soup
1 (1 lb.) can stewed tomatoes
1 c. instant rice, uncooked
Green olives
Sliced cheese

Saute onion in oil. Brown meat in sauteed onion. Add spices, soup, tomatoes, and rice. Cook 3 minutes. Pour into 9 x 13 inch casserole pan. Cut cheese diagonally and place on top. Slice olives and place on top of cheese. Bake at 350 degrees until the cheese melts and bubbles. About 30-40 minutes. Let stand 10 minutes, then serve.
