BAKED LOBSTER 
Prepare lobster as for broiling. Dot meat with butter; sprinkle with salt, freshly ground pepper and 1/4 cup coarse dry bread crumbs, buttered. Place on rack in roasting pan or baking dish. Cover and bake in 425 degree oven for 35 minutes, basting once with melted butter. Allow one lobster per portion.
