ALMOND NUT COOKIES 
1/4 lb. butter
1/2 c. granulated sugar
1 egg yolk
1 tsp. vanilla
1 c. all-purpose flour, sifted
3/4 c. toasted, chopped almonds
1 tbsp. cognac

Preheat oven to 300 degrees. In mixing bowl, cream butter and sugar. Beat in egg yolk, vanilla and flour, then mix in nuts and cognac.

Drop batter, teaspoon at a time, onto well buttered baking sheet that has been dusted with flour. Bake 20-25 minutes or until cookies are light golden. While still hot gently remove from sheet with spatula and set on rack to cool. Makes about 30 cookies.
