2 eggs 1/2 c. butter 3/4 c. sugar 3 c. flour 3 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 tsp. lemon extract 1 c. buttermilk 1 c. raisins Combine buttermilk and baking soda and set aside. Cream together butter and sugar. Combine dry ingredients and add to creamed mixture alternately with buttermilk. Stir until thoroughly moistened. Pat out to about 1/2 inch thick on board, using lots of flour as mixture is very sticky. Cut into circles. Bake at 400 degrees for 10 minutes or until firm. These are best if not browned. (Cut down on water, if using powdered buttermilk.) |
