MOCHA WALNUT WONDER MUFFINS 
1 1/2 c. flour
1 1/4 c. whole wheat flour
1 c. brown sugar
1/3 c. cocoa
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 c. buttermilk or 1 c. plain yogurt
3/4 c. vegetable oil
1/2 c. brewed coffee (strong)
3 eggs
1 tsp. vanilla
1 c. chopped walnuts
1 c. chocolate chips

Preheat oven to 375 degrees. Grease 18 muffin tins. Mix flours, sugar, cocoa, baking soda, salt and baking powder. Whisk buttermilk (or yogurt), oil, coffee, eggs and vanilla. Stir flour mix into buttermilk mixture. Add walnuts and chocolate chips. Spoon into muffin tins. Bake 20 minutes.
