SPLIT PEA SOUP 
2 c. dried green peas
1 onion, chopped
4 carrots, diced
Salt and pepper to taste
3 qts. water
1 c. cured ham, diced and ham bone if available

Bring water to a boil. Add peas, onions and carrots. Add ham and bone. Bring soup back to boiling point. Reduce heat to simmer. Simmer 2 to 3 hours until peas are tender. Add salt and pepper. Mash peas with potato masher or blend in blender until mashed completely. If blender is used, save out some ham pieces to add to soup when blended.
