MEATLOAF
6 slices bacon
3 lg. eggs
1/2 c. milk
Salt and pepper to taste
1/4 tsp. thyme
1/4 tsp. nutmeg
Dash of ground cloves
1/2 tsp. dry mustard
1 tbsp. light brown sugar
1/2 c. chili sauce
1 c. soft bread crumbs
2 lb. ground beef
1/2 c. chopped onion
2 tbsp. chopped parsley
2 tbsp. chopped celery leaves
1 clove garlic, minced

Saute bacon over medium heat until partially cooked, but not brown. Drain on paper towels. In large bowl with fork, combine eggs with milk, salt, pepper, thyme, nutmeg, cloves, dry mustard, brown sugar and beat lightly. Stir in bread crumbs. Let stand 5 minutes.

Add beef, onions, parsley, celery leaves, and garlic. Mix well. Transfer mixture to foil-lined 8x12 inch baking pan. With hands, press and shape mixture into a 10x4 inch loaf. Arrange bacon diagonally on top of loaf and glaze with chili sauce. Bake in preheated 350 degree oven for 45 minutes or until done. Makes 8-10 servings.
