SARA'S COCA-COLA CHICKEN 
4 chicken breasts (boneless, skinless)
1 tbsp. cooking oil (canola or olive oil)

COCA-COLA SAUCE:

1 (12 oz.) can Coca-Cola
2 cups ketchup (Hunts)
1 1/2 cloves garlic, minced
1/2 medium onion, chopped
1/2 green pepper, chopped (seeds removed, cored)

Lightly cook chicken in oil until half cooked through. Drain on paper towels. Drain all except 1 tablespoon oil.

Add garlic, onion and bell pepper. Sauté until lightly tender. Add ketchup and cola. Stir until well combined. Return chicken to sauce and bring to a boil. Reduce heat to simmer and cook until chicken is tender, stirring often to prevent scorching.

This recipe is best server over steamed rice. Recipe may be doubled.

Serves 4.
