MAINLAND CHICKEN LUAU 
2 chicken breasts, split in half and skinned
2 pineapples
8 oz. noodles
1/2 lb. ground pork
5 oz. chopped water chestnuts
1/3 c. chopped onion
1/4 c. fine dry bread crumbs
1/2 tsp. salt
1 1/2 tsp. soy sauce
1/4 tsp. ginger
1/8 tsp. cayenne pepper
1 tsp. sesame seed
1/3 c. honey

Combine pork, chopped chestnuts, onion, crumbs, soy sauce, salt, ginger, cayenne. Divide mixture and press 1/4 on top of each piece of chicken. Sprinkle with sesame seed and bake at 325 degrees for 1 hour.

Next cut up pineapples in half lengthwise (leave green leaf). Remove pineapple reserving 1/2 inch thick shells. Dice removed pineapple and mix with honey.

Cook noodles in salted water. Drain. Stir pineapple-honey mixture into noodles. Put mixture into shells and top with meat.
