CHILI CON CASHEW 
2 carrots, chopped
2 onions, chopped
2 green peppers, chopped
2 cloves mashed garlic
1 c. raw cashew pieces
2 tbsp. oil
2 - 3 c. cooked kidney beans (or 1 can Mexi - beans)
4 c. chopped tomatoes
1 tsp. basil
1 tsp. oregano
1 tsp. cumin
2 - 3 tbsp. chili powder or to taste
1 bay leaf
Salt to taste
2 tbsp. dry sherry (optional)

Saute carrots, onions, peppers, garlic in oil. Add nuts, tomatoes and seasonings. Simmer 2 hours until thick. Stir in wine. Serve topped with grated cheese.
