APPLESAUCE 'N BRAN MUFFINS 
5 packets (5 oz.) instant oat bran
1/2 c. firmly packed brown sugar
1/2 c. chopped pecans
1/4 c. whole wheat flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
2 egg whites
1 c. unsweetened applesauce
2 tbsp. vegetable oil
1 tsp. vanilla

In large bowl stir together dry ingredients; set aside. In small bowl, combine remaining ingredients until well blended. Add liquid mixture all at once to dry ingredients until just moistened. Line muffin cups with paper baking cups or spray bottoms only with vegetable oil cooking spray (Pam). Fill cups 2/3 full. Bake at 400 degrees for 15 to 20 minutes. Serves 1 dozen.
