MEXICAN CINNAMON COOKIES 
1 c. (2 sticks) butter
3/4 c. powdered sugar
2 1/4 c. all purpose flour
1 tsp. cinnamon
1 tsp. vanilla
1/4 tsp. salt
1/4 c. granulated sugar
1/4 tsp. cinnamon

In large bowl, beat butter until light and fluffy. Beat in sugar, flour, cinnamon, vanilla and salt until well combined. Dough will be stiff. Shape into a ball and wrap with waxed paper. Refrigerate 30 minutes. Pinch off small pieces of dough and shape into 1" balls. Place about 1" apart on ungreased cookie sheet. Bake in 400 degree oven for 10 minutes or until delicately golden brown. Combine sugar and cinnamon. Roll hot cookies in this mixture. Makes 5 dozen cookies.
