KAFTHA 
2 lb. finely ground lean lamb
1 c. finely chopped parsley
1 tsp. allspice
1 c. finely chopped onions or scallions
2 tsp. salt
1/2 tsp. black pepper
1 egg
Ice water

Mix ground meat with parsley, onions, scallions, allspice, salt, pepper, and egg. Knead together very well, adding a little ice water to loosen the mixture. Put through the meat grinder to mix all ingredients and knead again about 10 minutes adding ice water if necessary. With hands dipped in water, shape mixture into patties and fry on both sides until brown. Mixture also can be placed on skewers to resemble sausage shape and broiled or barbecued.
