$2000 APRICOT GOOEY CAKE 
Cook 14-18 large dried apricot halves in water to cover until tender. Drain and mash.

1 2/3 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. sugar
1/3 c. Crisco
1 egg
1/2 tsp. vanilla
1/4 tsp. lemon extract
3/4 c. water

Cream Crisco and sugar. Add egg and flavorings. Add dry ingredients alternately with water. Blend in 2 tablespoons mashed apricots. Bake in 9 x 9 x 2 inch well greased pan at 350 degrees for 35 minutes. Frost when cool.

Cook:

2 tbsp. butter
1/4 c. brown sugar
Rest of cooked apricots (1/2 c.)

Cook 3 minutes and add 1/2 cup coconut. Frost cake and serve.
