CORN BEEF SALAD 
2 env. clear gelatin
1/4 c. cold water
1 1/2 c. tomato juice
1 tsp. lemon juice
1/2 tsp. salt
1 tbsp. chopped onion
1 tbsp. chopped peppers
1 (12 oz.) can corned beef shredded fine
3 chopped hard boiled eggs
1/2 c. chopped cucumber
2 c. chopped celery
1 c. mayonnaise

Soften gelatin in cold water. Heat tomato juice and gelatin, stirring until dissolved. Add lemon juice, salt and chill until partially set. Combine remaining ingredients and fold into gelatin mixture. Place in 9 x 13 inch pan chill until cold. Cut into squares and serve over lettuce.

Serves 12.
