MOLDED CORNED BEEF SALAD 
1 (3 oz.) pkg. lemon Jello
1 1/4 c. hot water
1 can cubed corned beef (chill can for easier cubing)
1 c. diced celery
1 med. onion, diced
1 c. diced cucumber or 1/2 c. diced green pepper
1 c. mayonnaise
1 tsp. fresh lemon juice
1 tsp. horseradish

Dissolve gelatin in hot water. Mix mayonnaise, lemon juice, horseradish and pinch of salt. Beat mayonnaise mixture into the gelatin until smooth. Add remaining ingredients. Pour into 1 1/2 quart mold and chill thoroughly.
