LEMON PIE FILLING 
1 pt. boiling water
3 egg yolks, beaten well
1 c. sugar
3 heaping tbsp. cornstarch
1 lemon juice

Mix cornstarch, sugar, and egg yolks together into hot water plus lemon juice in saucepan. Cook until thick, stirring constantly. Take from stove, add small piece of butter. Pour into baked pie shell. Use egg whites for meringue.

This recipe has been in my family for over 3 generations.
