APRICOT BARS 
1/2 c. butter
1 c. unsifted flour
1 tsp. baking powder
1 egg
1 tbsp. milk
1 c. apricot jam
1 c. sugar
1 egg
4 tbsp. butter, melted
2 c. flaked coconut

Preheat oven to 350 degrees. In mixing bowl, combine butter, flour and baking powder. Using 2 knives or pastry blender, blend until crumbly. Beat 1 egg with milk and stir into dough. Stir until mixture holds together. Spread dough into greased 7x11 inch pan. Bake in 350 degree oven for 15 minutes.

Spread apricot jam on pastry layer. Combine sugar, remaining egg and melted butter. Stir in coconut. Spread over jam layer. Bake in 350 degree oven for 25 to 30 minutes more, or until golden brown and just set. Cool. Cut into bars when cool. Makes 24 bars.
