APRICOT OATMEAL BARS | |
3 1/4 c. dried apricots (cut up) 3 c. water 1/2 c. sugar 2 c. flour 2 c. rolled oats (quick) 1/4 c. wheat germ 1 c. brown sugar (packed) 2 sticks butter (melted) 1 tsp. baking soda 1 tsp. vanilla (About 1/2 c. chopped nuts) Combine apricots, water and sugar in saucepan. Stir about 5 minutes until sugar is dissolved. Simmer until almost all water is absorbed - 15 to 20 minutes. Mash apricots and cool. Sift flour with baking soda into large bowl. Combine remaining dry ingredients with flour and baking soda and mix well. Add vanilla to melted butter and mix into dry ingredients until a crumbly mixture if formed. Press a little more than half of this crumb mixture into bottom of jelly roll pan that has been very lightly greased and floured. Spread the apricot mixture evenly over the crumb base. Top with remaining crumb mixture and sprinkle nuts on top - pressing down gently. Bake in 350 degree oven for about 35 minutes until lightly browned. Cool before cutting. |
