CHOCOLATE SNACK CAKE 
25 packets Equal
6 tsp. Butter Buds in 1/3 c. warm water
2 oz. unsweetened chocolate, melted
1 tbsp. cocoa
2/3 c. instant mashed potato flakes
1 c. fructose
1 c. unsweetened applesauce
3 tbsp. frozen unsweetened apple juice concentrate, thawed
2 egg replacers, beaten with water
1 tbsp. vanilla
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt

Combine 24 packets Equal, fructose, applesauce, Butter Buds, apple juice, chocolate, egg replacers, vanilla, and cocoa in medium mixing bowl. Blend well.

In small bowl, combine flour, potato flakes, baking powder and salt. Stir flour mixture into chocolate mixture. Mix well. Spray 8x8x2 inch microwavable pan with Pam and spread batter into pan.

Cook uncovered on high 3 minutes; rotate dish 1/4 turn. Repeat. Continue cooking 1 to 3 minutes more until wooden toothpick inserted in center comes out clean. Let cool on heat-proof surface (do not use rack). Sprinkle with 1 remaining packet of Equal just before serving.
