SEAFOOD CHOWDER | |
8 oz. crab meat 8 oz. minced clams 8 oz. tiny shrimp 4 strips bacon, diced 1 clove garlic, minced 2 c. diced potatoes 1 c. dry white wine 2 tsp. salt or to taste 1/8 tsp. pepper 1/2 tsp. dill weed 1 can cream style corn 3 c. milk 1 c. half and half cream 1/2 c. chopped onion 2 tbsp. minced parsley Drain seafood, reserve liquid. In large kettle, saute bacon and garlic until bacon is crisp. Add potatoes, liquid from seafood, wine and seasonings. Cover and simmer 20 minute or until potatoes are tender. Add seafood and remaining ingredients. Heat slowly to simmer, but do not boil. Serves 5 to 6. |
