ZUCCHINI BREAD 
3 c. flour
1 tsp. salt
1 1/2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder

Sift and set aside. 2 c. sugar 1 c. salad oil 1 tbsp. vanilla 1 c. grated unpared zucchini

Beat eggs well, gradually adding sugar and oil. Add dry ingredients, vanilla and zucchini. Put in greased loaf pans. Bake at 350 degrees for 1 hour or until it tests done. Cool 10 minutes before removing from pan. Makes 3 small loaves or 2 loaves (8 1/2 x 4 1/2 x 2 1/2 inches).
