QUICK ZUCCHINI SOUP 
1 cube butter
1 lg. onion
4 c. chicken broth
6 c. or more zucchini, cubed
Salt & pepper

Saute onion and zucchini in butter until onion is soft, not brown. Add chicken broth and cook 10 minutes at high heat. Then put whole mixture in blender. Serve. You may substitute any variety of squash. I've even used broccoli.
