ALL SEASON BREAD | |
3 c. flour 2 tsp. baking soda 1 tsp. salt 1/2 tsp. baking powder 2 tsp. cinnamon 3/4 c. finely chopped nuts 3 eggs 2 c. sugar 3/4 c. oil 3 tsp. vanilla 1 (8 oz.) can crushed pineapple, drain well 2 c. prepared fruit or vegetable - ie. grated zucchini without seeds or grated carrots or grated apple Combine flour, baking soda, salt, baking powder, cinnamon and nuts. Set aside. Beat eggs lightly in a large bowl and add sugar, oil and vanilla. Beat until creamy. Stir in drained pineapple and choice of prepared fruit or vegetable. Add dry ingredients, stirring only until moistened. Spoon into 2 well-greased regular loaf pans or 4 small. Bake at 350 degrees for 1 hour for large, less small. Cool 10 minutes and remove from pans. Freezes well. |
