PEACH FRITTERS 
Drain frozen, thawed peach slices and cut into bite-size pieces and sprinkle lightly flour. With a long handled fork, dip fruit into batter (see below). Allow excess batter to drain off. Lower fruit into hot fat (375 degrees), fry 2 to 3 minutes until brown. Drain and sprinkle with powdered sugar.

PLAIN FRITTER BATTER:

2 c. flour (sift before measuring)
1/2 tsp. salt
1 tsp. baking powder
2 eggs, beaten
1 tbsp. melted shortening
1/2 c. milk

Sift dry ingredients, add eggs, shortening and milk. Mix well.
