CURRIED CHICKEN SALAD 
3 c. butter lettuce
1 c. spinach
1/4 c. fresh cilantro
2 c. chopped cooked chicken
1 c. string beans
1/2 c. carrots, slivered

In a large bowl, combine lettuce, spinach. Break into bite size pieces. Add cilantro. Cook string beans and let cool a little bit. Boil water and pour boiling water over carrots and allow them to blanch fore 1 to 2 minutes. Drain. Add chicken, string beans, and carrots to salad greens. Prepare the dressing.

DRESSING:

4 tbsp. olive oil
2 tbsp. fresh lime juice
3 to 4 tbsp. mayonnaise
1 tsp. curry powder
2 tsp. honey
1 tsp. basil
2 tsp. scallions minced
Fresh ground pepper

In small bowl, combine oil, lime juice, mayonnaise, and honey. Whisk until creamy. Add curry powder, basil, and scallions. Whisk again. Pour over salad. Season with pepper to taste.
