FETTUCCINE WITH BROCCOLI -
GRUYERE CHEESE SAUCE
 
2 1/2 c. broccoli (or asparagus), cut in 1 inch pieces
1 lb. fettuccine, cooked
2 tbsp. butter
1 1/2 tbsp. flour
1 c. low-fat milk
1 c. grated Gruyere cheese (or Swiss)
Freshly ground black pepper

Place broccoli in steamer. Steam until tender, about 10 minutes. Melt butter in saucepan over low heat. Whisk in flour, whisking constantly over low heat 3 minutes. Gradually whisk in milk and bring to a boil. Simmer until flour taste disappears, about 5 minutes. Whisk in cheese until cheese is melted. Combine cooked fettuccine with steamed broccoli and toss with cheese sauce. Pass freshly ground black pepper. Serve with French bread (or sour dough). Makes 4 servings.
