CREAMY GELATIN SALAD 
1 sm. can (6 1/2 oz.) crushed pineapple, drain 1/2 juice
1 pkg. dry mixed fruit gelatin (or any flavor)
1 sm. carton cottage cheese (sm. curd)
1 sm. carton Cool Whip

Place pineapple with 1/2 juice in small saucepan. Cook on medium heat for 2 minutes. Then add gelatin; cook 2 more minutes. Cool mixture. Then combine cottage cheese and Cool Whip. Mix thoroughly. Then add cooled gelatin and pineapple mixture. Stir together until all blended. Pour into 8 inch square cake pan and chill at least 3 hours in refrigerator. Cut into squares to serve. May garnish with sliced fruit. This recipe doubles easily.
