SWISS STEAK 
1/2 c. flour
Salt & pepper
Scant tsp. paprika
2 lb. steak, cut 2 1/2" thick from shoulder, rump or round
2 tbsp. fat
Few slices onion
1/2 green pepper, chopped fine
1 c. boiling water
1 c. strained tomatoes

Season flour with salt and pepper. Pound it into the meat with a wooden potato masher or the edge of a heavy meat mallet. Brown the meat in fat. Add onions, green pepper, boiling water and tomatoes. Sprinkle with paprika. Cover closely. Simmer for 2 hours. This may be cooked in casserole in moderate oven (350 degrees) about 1-1 1/2 hours. Vegetables may be added as desired. Serves 6.
