TUNA CROQUETTES 
2 (7 oz.) cans tuna or salmon
1 can cream of mushroom soup
1/2 c. quick cooking rolled oats
1/4 c. finely chopped onion
1 egg, beaten
3 tsp. lemon juice
1/3 c. milk
2 tbsp. mayonnaise
Cracker crumbs
2 tbsp. butter

Mix fish, 1/4 cup soup, oats, onion, egg and lemon juice thoroughly. Make into 8 croquettes; roll in crumbs. Cook in 2 tablespoons butter. Blend remaining soup, milk and mayonnaise; heat. Pour over croquettes and serve. Yield: 4 servings.
