CURLY CHEESE TOAST 
Thin sliced pumpernickle or whole wheat bread
Cheddar cheese, shredded
Butter, melted

Toast bread under the broiler until both sides are dry, but not brown, and the bread is curled. Brush lightly with melted butter. Sprinkle on just a bit of shredded cheese. Return to warm oven to allow cheese to melt slightly. Serve with a bowl of soup and a salad. This is a wonderful light supper.
