PEA SALAD 
This recipe has been in my family for many years. I have never met anyone who has ever made this and everyone I have ever made it for has loved it! As a kid growing up my mother would only make this as a side dish on the Holidays... now I make it whenever I want :)

1 (15 oz.) can baby peas
3 tbsp. mayonnaise
3 hard boiled eggs, divided
salt and pepper
paprika

Empty can of peas into pot and heat thoroughly.

Right before dinner is to be served, drain peas, turn heat to low and add mayonnaise, two chopped hard boiled eggs, salt and pepper. Gently stir to mix. Put mixture in a glass bowl and garnish with the remaining boiled egg (sliced) and paprika.

That's it! Enjoy!!

Serves 4 to 6.
